Stuffed Bell Peppers

I’m only cooking for 2 of us so I make smaller portions! You can always double the recipes.

What you will need

  • 4 bell peppers
  • ½ c wild rice (or any rice)
  • 1 pound ground turkey
  • ½ c mozzarella cheese
  • ¼ c cheddar cheese
  • ½ an onion
  • 2 tbsp sour cream (optional)
  • seasons of your preference
  1. Preheat oven to 350 degrees F
  2. Place ½ c of wild rice in a pot with 2 cups of water, and boil for 40 to 45 minutes
  3. Start boiling water for the bell peppers
  4. Cut a hole out of the top of the bell peppers and remove seeds
  5. Place bell peppers in boiling water, and cook for about 20 minutes
  6. Start browning the ground turkey. Season to preference
  7. Chop onion
  8. Once turkey and rice are done, mix together and add diced onion
  9. Add sour cream and ¼ c of mozzarella cheese to turkey mixture
  10. Remove bell peppers from water and add a pinch of cheddar cheese in the bottom of bell pepper
  11. Place turkey mixture into bell peppers then top with the rest of the cheddar cheese.
  12. Bake for 15 minutes
  13. Enjoy!!
